Aubergines, the trick is to soak them for 30 mins in salted water. The salt doesn't impact the taste, but it makes the difference between a lousy aubergine that doesn't cook right and a really tasty one.
Roasted aubergine with pasta is good. Or sliced and roasted and placed top of some rolled puff pastry (on top of tomato sauce and mozzarella) with mixed sliced roast peppers and tomatoes (cook in the oven for about 25-30 mins, until cooked and golden). Or roasted and served with salad leaves with a balsamic dressing. Or served in a vegetable lasagne.

History and Etymology for aubergine
French, from Catalan albergínia, from Arabic al-bādhinjān the eggplant, ultimately from Middle Indo-Aryan *vātiñjaṇa-, vātiṅgaṇa-
So arguably, the Brits got the name from the original language and the origins of it in South Asian and East Asian horticulture.
Eggplant is odd. It's nothing to do with eggs.
