I actually don't have a direct comparison to make for the one spot I got to. I haven't personally been to Mexico (Dad refuses to let me go due to the Drug Cartels) however those that have who I know say its pretty close to what they have there. Have been to Nicaragua though, and while the food is quite different then Mexican food, I would say the preparation and style of food service there isn't that different from Mexico. Again though I lack a direct comparison and only have the word of others that have been to both.

Ah yes the day when Mexico went from being run by racist criollos with a caste system that marginalized the indigenous people to being run by racist Mestizos with a slightly more friendly caste system marginalizing the indigenous while trying to get them to assimilate into being mestizo too, lovely.

When I went to Mexico, all I got to eat was hot dogs with salsa, plus Doritos. :|

In addition to Americanization there's also different regions with different types of food and immigrants bring their regional style with them, so that's another reason why it might not taste the same as that area of Mexico.

Many of Mexico's presidents were criollos. The upper classes are still largely white. It's not really the white people's fault, it's more of the government doing its best to pander to the rich and foreign corporations rather than you know...Mexicans.
