When I get one, what should I start with?

Depends, if you're more into personal intrigues, dynasties, incest and murder -- then go play CK2.

If you rather want to commit genocide, have personal unions, play as a nation instead of a person -- then EU4.

I'd advise to go either CK2 and then EU4, or EU4 and then CK2. After that, if you like complexity, Victoria 2, Hearts of Iron, and then Hearts of Iron 3 with Black Ice mod on.

I swear there's no complexer game than HoI3 + BI Mod.
