For example, when we get measles outbreaks because there are too many antivaxxers, those outbreaks have limited reach because most of the US is vaccinated. There are enough unvaccinated people for sporadic outbreaks, but there are not enough for it to escalate into a global pandemic. Before the invention of a vaccine, measles was everywhere.

It is possible to modify vaccines, but there would probably still have to be trials as for any new COVID vaccine to include the variant (as the vaccine itself is fairly new). So that could conceivably slow the process.
