You can always try and reform Byzantium. I think the requirements for that entail having a female control Contstantinople? I don't remember exactly, but it was something weird that had to happen when I went Ivaring -> Rome.
Sidenote: I have no screenshots of that game because those were on an old PC that was not backed up

Political mapmode. Notice based nominally-Irish Britain and thiccboi Byzantium
Religion mapmode. Islam got its cheeks clapped and the only reason it still exists at all is that that Genghis decided to convert and soon as he arrived on the map
Culture mapmode. German got, uh, lots of lebensraum, including vacation homes in Ethiopia and Chad
Endgame screen, score, and list of rulers. Special attention goes to Saint Reccared and King Geraldo, who were my absolute favorite rulers
Rulers part 2. King Silvestro and Emperor Antonio were also pretty amazing.
