Actually a lot of vampire fiction requires some sort of blood mixing ritual to actually turn somebody into a vampire, the bite alone is not typically enough.

Hey don't understimate rabies, a large global rabies outbreak would be just as bad as any zombie outbreak.

Rabies isn't much better than a zombie virus in an area without a cure. A full blown rabid human supposedly can't feel pain because of the brain damage, and they infect by bite, basically until they bleed, shut down due to their bloody mess of a heart missing, or you get a headshot... They will keep coming at you.

Because everyone takes black market organs. To compare again, donated Vampire blood. More people get blood than they do get organ transplants.
