It’s slightly bitter but otherwise tastes like Chinese sea cucumber except “meatier”
I think a lot depends on how good the sauce flavoring the snails are
If the sauce is weak, it doesn’t work very well. But with the good sauce the contrast and effect is amazing.
I always like to order escargot if it’s an option as appetizer.

Baked snails ?I think it depends more on cooking methods and techniques.A sauce that is too strong can mask the taste of the food itself,especially when eating seafood.
