Looks good, too. The thing that fascinates me about vegan cuisine is how there always seem to be alternatives for animal products, which is a rather impressive accomplishment.

I find vegetarian dishes which use non-meats in interesting ways to be worthy of paying attention to.
I find vegetarian dishes which attempt to use non-meats as meats(soy meat, for example) to be generally cringey.

I haven't eaten a non-aquatic species in a long time.

Faux meats are ok once in a while when I'm nostalgic for a burger or a dog and want something that gets 40-80% of the way there. The fake breaded chicken and soyrizo probably come closest.

Red onions are the best. they are better than any onion. If you choose to have yellow onions, I recommend to caramelize them. They add a delicious flavor.
