But I'm sure in the vast world of cheeses, there is one I will enjoy more.
There's a fermented goat milk (or yak milk?) yoghurt in Mongolia, I've never tried it, which must have cheeses associated with it. A naturally alcoholic bitter white cheese would probably surpass my current favourite.

Same for "chevre". That's no specific cheese, it's just French for "goat".
Not even touching "Swiss". I can name at least five different Swiss cheeses off my mind (Emmentaler, Gruyere, Tilsit, Appenzeller, Sbrinz).

Depends on how you're using it.

I love figs split, with a bit of gorgonzola inside, wrapped with prosciutto and baked in the oven. Easy, delicious, savory and sweet together.

Slices of mozzarella with ripe tomato, basil and good olive oil make a nice salad.

Smoked mozzarella is simply divine -- slices of that with some olive oil is perfect as well.

On a sandwich I am more likely to use provolone or cheddar.

Over pasta, grated parmagiana-reggiano or peccorino romana.

Cheddar is indisputably the best cheese ever invented. It is more versatile than most cheeses, due to its basic, simple flavour that does not stand out against most other flavours, allowing for it to mingle with other ingredients in a most elegant way, but can stand on its own without tasting bland. It is also a very meltable cheese, allowing it to be melted upon any pizza, cheeseburger, pasta or other foodstuff that requires a melted cheese. And best of all, cheddar is cheap, so its wonderful properties can be enjoyed without breaking the bank. Cheddar is a true jack of all trades, and although it may be a master of none, it is certainly better than a master of one.
