It melts more quickly if sliced really thin. Actually, grated cheese is very good for melted cheese sandwiches. You put mayonnaise on the outside to get a nice crisp finish, shredded cheese inside ... delicious!

I've always enjoyed a good gouda cheese. But I also had a really good cheddar gruyere when I was in Wisconsin a few months back. I just like strongly flavored cheeses over gentler flavors like mazzarella or provolone.

for cheesey toast you'll have to go a long way to find something a good as lancashire- ace accompanied by some baked beans(the british variety- which is so popular here)

for a fried chese and ham sandwich- croque monsieur- which is lovely- try it(mushrooms can be substituted for the ham quite satisfactorily) it should be something like gouda.well worth the effort.

blacksticks blue is very nice. if you can get sage derby in season- not the processed crap that is very nice and you can even succcessfully toast the former but not the latter

Cheddar is the most versatile and the best thing to put on a cheeseburger.

Parmesan works great with most pasta dishes, and it's also a great addition to scrambled eggs.

Mozzarella is usually necessary for good pizza.

Gorgonzola, I didn't like much at first but it's growing on me.

I'd make a cheesy joke if I could think of one, but… eh. I have cheddar things to do with my time. And I'm just no Gouda at the delivery. I always make a Swisstake. Plus, I can never keep it Brie-f — I get carried away. Let me tell you, that really gets my goat.

Paired with a pinot noir from Burgundy, and it will change your life; though at a pinch you could also try it with a good-quality palo cortado sherry, like I did over Christmas.
