It melts more quickly if sliced really thin. Actually, grated cheese is very good for melted cheese sandwiches. You put mayonnaise on the outside to get a nice crisp finish, shredded cheese inside ... delicious!

My bf doesn't like cheese that has visible mould on it, such as Langres, but it's more blue cheese that he hates. I had some blue cheese on Christmas, much to his disdain.
