I heartily agree on the crust! I lived 4 years in Chicago and nobody I knew liked that so-called "Chicago" deep dish crust. Gooey dough. It is Sicilian, and was advertised as such. Most folks I knew, around Ashland and Cermak, and on the near North Side, liked it just the way you do.

I like anise seed; I think it is an important element in Italian cuisine.

I love pizzas that doesn't contain onions and garlic. And there must be extra mushrooms and cheese.

I like me a Sicilian corner slice, with a generally smooth, not too acidic and certainly not SWEET tomato sauce, lots of garlic and basil and REAL mozzarella cheese, not skim or half-skim or PLASTIC cheese. It needs to be goey-stretchy when cut hot.

I like a wood brick oven too; my fave toppers are pepperoni, sausage, black olives and banana peppers. Could add onions and mushrooms too,

Onions sound pretty gross on pizza, but the rest of this is quite reasonable.

When I came back, the first thing I wanted to eat was a real, normal pizza. It was agonizing to see pizza advertised, but only with gross toppings.

For ice cream: Red bean paste, yes. That’s just one I can think of.

I don’t know about the squid ink pizza but I wouldn’t be surprised if they did have it.
