As one of the few people on NS with an incurable terminal (albeit slow-working) medical condition, I've already been working my way through my list for some 5 years now.

The main remaining items are:

1) Visit Mount Athos
2) Visit Bhutan
3) Attend a performance of Boris Godunov at the Mariinsky Theatre
4) Attend any performance of Sergei Taneyev's Oresteia - if someone, somewhere, can bring themselves to perform it.
5) Finish my research on Venezuela.
6) Get funding for and undertake an archaeology project on the 19th-century Welsh colony in Patagonia, leukaemia be damned.
7) Eat an Ortolan prepared in the classic manner (captured alive, force-fed, drowned in Armagnac, roasted whole and then eaten whole - bones and all)

I have a list floating around somewhere...
From memory:
-All the regular stuff, find wife, have family, be rich etc.
-Convince New Zealand to adopt nuclear power
-Be alive when the last few communist countries become non-communist.
-Win a Nobel Prize in Physics or Medicine, or if desperate Economics.
-Achieve the above by being a renowned Nuclear Physicist or Neurosurgeon.
-Step foot on all major geographical zones.
-Visit Portugal, London and Alaska
-Become a politician in my later years
-Further the cause of capitalism
-Destroy the New Zealand Green Party (Legally)
-Complete "Challenge List" that me and my mates made (A collection of stupid dares that beforehand comprised of a number of other steps on the list)
-Buy a sidearm
-See a Llama and spit on it if it spits on me
-Live out my twilight years as the New Zealand ambassador to Portugal.

1. Run for public office.
2. Earn a law degree.
3. Become a national office bearer of the Party for a few years.
4. Finish reading every Nietzsche wrote.
5. Get and win a referendum on Scottish Independence.
6. Become a member of a parliament to which Scotland sends members.
