I don't see it as a bad thing. If people want to gather at Discord as well, I'm already there, that's all.

It looks like there are benefits to using discord that you don't get on esper, so I agree. While I still don't see the need for two identical chats, that doesn't seem to be the case here.

It looks like another benefit of Discord is that the server admin can easily create new channels for various topics and people can easily switch between them (or ignore ones they aren't interested in). Seems like a good way of allowing people to pick and choose what types of discussions they want to see and/or participate in. Its also possible on Discord to receive notifications for every message in a channel or even every message on the server.
A Discord server seems to be basically the equivalent of an IRC channel, btw.

Don't think you'd need a lot of different channels.
Maybe one for regular stuff and another for the usual "let's play Cards Against Humanity" shenanigans.

Entirely up to you, really. There are several options. IMO it's best to come up with an idea of what you want to do first, and then see how it can be done.
You could look at a real life tournament and model the format (entrants, teams etc) on that... then decide what kind of scoring system you want.
Do you want best of x rounds, winner of each round is the first to y points? If so, something like tennis or badminton might work.

Should I use the xkoranite scorinator? Also how does it work?
