OOC: In theory, it would come down to the skill of the pilots in question, as well as the other imponderables present in war. Since both aircraft have low-observable features as standard, both aircraft would have to close to the range where their radars can pick up low-observable aircraft (Stealth does not mean that your aircraft is invisible to radar, it just means that it is harder to pick up on radar).

Both aircraft might turn their radars off and rely on IRST in order to find each other. This is because there is no way to completely hide the heat from the engines (though there are ways to reduce the heat signature from the engine exhaust).

There is plenty of potential for such a match to move into a dogfight. In other words, yes it would be possible for someone using the LY910 to defend against others using the LY910, if you use the Shadowhawk intelligently.

This is assumed with no ground based support for either side.
