Unless you are open to certain theories regarding ancient contact with the Americas in some shape or form, often involving Romans, Celts, Chinese or Phoenicians, in some manner (though also Japanese, Polynesian and Welsh theories exist, too). The Norse, for one, haven't founded any settlements in Vinland/Newfoundland yet, either. To mention yet another theory, the Templars don't exist yet either, so they can't have gotten to the East Coast, left stuff lying around, or gone back to Scotland and left signs in Rosslyn Chapel.

I also noticed that, when you mentioned in the OP that Saracens were fighting Byzantines in the fifth century. That said, I suppose it's correct to say that at least some groups of Arabs/Saracens were fighting the Byzantine/Eastern Roman Empire on behalf of the Sassanid Persians, though at the same time the Byzantines had Arab tribes affiliated with them doing the same thing. In particular, the Lakhmids were amongst the most powerful of the Arab groups siding with the Persians, whilst the Byzantines had the Ghassanids, in that respect.

Meanwhile in Britain, things get a bit messy and uncertain, especially with the Germanic migrations/invasions and assorted realms of the Celtic Britons. Of course, the specifics regarding King Arthur, such as who he was, and whether he even existed, are another can of worms. That said, I do know an archaeologist and historian who's making a book/documentary on king Arthur (possibly both).
On a related note, Pendragon or "head/chief dragon" (Pen Draig or in the full Welsh form, "Pen y Ddraig") is more of a Celtic military title than a name of any kind, and essentially amounts to a "supreme commander of the allied forces/tribes".

The unamused officer stood over them, hands on his hips, disapprovingly.

Sancho let out a groan, as Don weakly brandished the mop.

Hun, we're worldbuilding. Dragons can be whatever the hell we want them to be. There is literally nothing forcing us to make dragons in any particular way. The legends and folklore provide the basis for them, but we can add and subtract qualities as we please.
