Recall MiGs being shot down by piston-prop aircraft, namely the Hawker Sea Fury and then the Douglas Skyraider. :p

To be fair, there is some precedent for seaplanes holding their own.
The example of the lone Short Sunderland fighting off eight JU88s in night-fighter configurations by itself - shooting down six in the process - speaks to that.
The Catalina was a fairly tough plane itself, so it's not nearly impossible it could fight off a few 109s, depending on luck and crew skill.
