Nah, they didn't eat the parents in folklore. They were just odd, misshapen babies with poor health and horrific cries. It was usually a punishment to the parents for interrupting a fairy ring.

IIRC, in the legends, the parents would get stuck with the changeling child and had to raise it. Changeling children were often described as irritable and bad tempered.
