Preschoolers don't have the same concept of "democracy" and "equality" as we do. There's no more value in a boy playing cars than there is a girl playing with a doll. They don't see it the same way as "adults" do.
And what will happen to these children later in life when they experience inequality and, in some cases, discrimmination? How will they handle those situations?

Baking works great though. You have to walk them through it and take the food out of the oven when it's done, but kids can mix ingredients, grease pans, etc. and I thought it was a lot of fun when I was a kid.

No. In fact, there has never been a time, in all of recorded history, in which all girls wanted to be princess and all boys wanted to be race car drivers. So really, what's "so bad" is the delusional fantasy world that you've decided to live in, and the fact that you think it would be great if the whole human race moved into your fantasy with you.

I think I might have had a princess phase for about a week, but then I went right back to my paleontologist/rock star phase. I mean, really who'd settle for sitting around in pretty dresses waiting for a prince to show up when they could be rocking out on their electric guitar next to a new species of dinosaur they'd just discovered with their badass scientist skillz?
And, more importantly, what sort of douchebag would want to tell a little wannabe rock star dinosaur expert that she couldn't do that, because she ought to aspire to be a member of the monarchy instead?

Yeah, that's true. It would be pretty douchey to tell such a person that.
As long as there are girls that still wanted to be princesses, and like girly things of their own volition, I'll be happy. And since gender neutrality doesn't really prevent that from happening, I'm good. I used to take it personally when people didn't adhere to what I thought they should be like. But a while back I realized that most people in the world probably don't live lifestyles the way I like, so it's better to save my efforts for finding the people that do, instead of worrying about the ones that don't.

What about them? The system they're using doesn't prevent them, either.
I like the gender roles as they are. Even if we eliminate the teaching of those roles, there will be a given group of people that will still choose them on their own. As long as we don't discourage that (for instance, by telling women who want to be stay-at-home moms that they're wasting their lives, when they aren't), then it's all good. I don't like boys wanting to be princesses, but I can't really control that, nor do I think it's something we ought to try and control.
