Like Haven said above, it's (at it's most basic) a story about a talented young boy who is looking for his father. It chronicles his various journeys and accomplishments over several arcs, with each one showing his further progression and improvements.
One of the best things about HxH are the characters: there are a lot of them, with huge variety, and almost all of them are executed with awesome perfection (with a few exceptions of course )
It's also a bit more intellectual than most shounen. I also like how it explains the battles, strategies, powers, etc. with great detail.
All in all it is amazing and you need to watch it right now

Especially considering how unashamedly over the top it gets. When I recommend it though, I always tell people to 1) Bear with the off-model artwork in episode 4, it was a different art director, and 2) give it to the end of episode 8 before deciding whether to keep going.
