Elsa nothing, the staff would have kept a bunch of cats to keep the rodent population down. Fairly common practice in that time period, from poor farmers to rich merchants. (And still in use in plenty of places even today!) I suspect had Elsa derived any comfort from animal company, the movie would have shown it; and it would have dampened the intended emphasis on her isolation in the film.

From my journey through the Frozen fanverse, it is popular opinion that Elsa is a cat person while Anna would be more of a dog person (since she is playful) while Elsa is more elegant, thus a cat.
