I'm not sure. I think part of it may be due to our relationship we have with dogs. We tend to look at wild dogs with contempt because we are so used to them as being pets, however wild horses are seen more positively because the connote a sense of freedom. To have this conflict between our social and individualistic natures drives many friendship stories, and MLP:FiM is no exception (the pilot, "Luna Eclipsed" especially come to mind), and thus makes the horse more identifiable with ourselves in such a struggle.

Wolves also convey a sense of freedom in a way, but people also have largely negative prejudices against wolves.

Maybe Ponies have a sense fun too, because of riding.
But, I myself like the idea of carnivorous, or at least omnivorous, ponies.

Ack, that new movie was pretty disgraceful, from more than a few standpoints. I will give props that Gatsby's and the Buchanans' houses were imagined quite beautifully.
