They tried that once. Six months later, the Parliament Investigatory Committee recommended a royal decree that she be permanently banned from using prescription or over-the-counter medication unless taken in the presence of no less than two platoons of the Royal Guard, which was made into law on the spot by Princess Luna.

Psh. "Parliament". How very droll! *high-pitched noblewoman's laugh, fan flutter*

It's the "Never say die" trope.
It's quite common in cartoons meant for kids. Basically, in a show whose central theme is teaching the wonders of friendship to little girls; dropping death in the middle of it would be difficult.
I don't see why death should be covered up from kids. It's an important thing to learn about.

Yes, but when children are young enough, Death tends to make them cry.
"Mommy, why weren't Applejack's mommy and daddy at the big party?"
"Well, they're dead, Sweetie. Death happens when you get very old or sick or hurt and then your soul departs from your body and you don't see your family again until Judgement Day, but no one knows when that is. Being that Applejack and Big Macintosh are so young to be burying both parents, their parents probably died slow, terrible deaths by injury in some horrific accident, or perhaps cancer, much like Grandma. I lied; she wasn't sleeping, she was dead. Anyway, eventually Granny Smith will die too, leaving Big Mac and Applejack to take care of Apple Bloom. Then Big Mac will die, old, arthritic, and possibly demented. Then will pass AJ then Apple Bloom and all the Apple Family, like dust in the wind. Everyone dies. So will Grandpa and Nanna and Pappy and me and Daddy and your older brother and possibly your babysitter, because she's about his age. And then, at the end of the line, your entire immediate family and most of your friends gone, you too will pass, assuming you haven't already died from some unspeakable illness or injury or murder. And then it will be your children's turn to bury you. And no matter how much you beg and plead, the relentless and cold grip of death will seize all at their Time Appointed and there's nothing you can do about it.
Nap time! Lunch will be grilled cheese. If you don't die before you wake up, of course!"
*eyes grow wide, sniffling begins*
