Ghost In The Shell, Cowboy Bebop, Samurai Champloo, Fullmetal Alchemist/ Fullmetal Alchemist Brotherhood (The two series complement each other really well. I don't really view either one as better except in terms of ending. Kind of the same with Bebop/Champloo), Trigun and Jojo's Bizarre Adventure (although my favorite Parts are in the Manga)

Rurouni Kenshin and Samurai X are my favorites.

My favorite 'mainstream' anime is likely Naruto and I enjoy One Piece as well.

But others I hold in high esteem are Cowboy Bebop, Ghost in the Shell: Stand Alone Complex, Black Lagoon, Samurai Champloo, Death Note, Full Metal Alchemist as well as some others.

I also enjoy Love Hina on the romantic comedy front and a friend has convinced me to get into some DBZ.
