Because it's the first proper 'war' and the only one we a) know next to nothing about and b) where the Grail isn't yet corrupted.

Personally I'm leaning towards the 6th or something similar to the events of Apocrypha in terms of origin.

Well, Lu Bu qualifies as anything except a Caster and a Saber according to the wiki, so he can fit in easily.

Yeah, let's go with UBW since it's the most well known of the routes. That puts Shirou and Rin out of the way in England and leaves Sakura, Shinji and Zouken in Fuyuki.
