Gist of it is that there are not technically as many, but some people prefer to call themselves by one name over the other.

Say, FTM or Female To Male, Cisgender Male or Cis Male or Male.

I personally think it's redundant, but I mean if it makes their users happy, by all means.

I don't get why they couldn't do it like political affiliation where there is a list of the most common ones, and then anyone whose political alignment is not on the list can type in their own. The options would be male, female, or other; and then if you choose other you could type in your own description of your gender. It would be more flexible for the people that have uncommon gender identities, particularly since people are always inventing new labels, and it's less likely to spark argument over what is or isn't a legitimate gender.

Overall, I get the feeling that someone just joy puked all gender definitions they could think of into the menu. Not necessarily a bad thing, but it does look a bit silly as it is now.

Indeed it is. It's great that a site with such a huge traffic pioneered this. Combined with Google's support of LGBT rights at the start of the Sochi Olympics, I can't help but to feel good about the Internet now.

It's real enough for most of us... I could just have very much said the same about most of the other names not actually existing. Mentality/emotion is not physicality, thus not recognizing something could very well mean I have no reason to acknowledge any others.

Why should irrelevant things like where your dangly bits are matter in purely social interactions? Why not go by how somebody identifies? It was a reference to a television show in which one episode featured a race that had three sexes, the justification being the third sex produces an enzyme used in Vissian reproduction, but the enzyme isn't a Gamete, no genetic material is passed from the cogenitor and the offspring of the couple they serve.
