National Dish: Sinigang ( Sinigang is most often associated with tamarind in modern times, but it originally referred to any meat or seafood cooked in a sour and acidic broth, similar to but differentiated from paksiw (which uses vinegar). Other variations of the dish derive their sourness from native ingredients. These souring agents include unripe mangoes, butterfly tree leaves (alibangbang), citruses (including the native calamansi and biasong), santol, bilimbi (kamias or iba), gooseberry tree fruits (karmay), binukaw fruits (also batuan), and libas fruits, among others )

Ika ma Kumara - Basically, fish and chips but could be translated better as fish and sweet potatoes. Traditionally the dish is served with kumara, or sweet potato chips but in modern times regular potato has become popular. The fish is usually white fish, with Hapuka (groper), snapper and hoki (blue grenadier) the most common types used. In modern times it's crumbed or battered, but traditionally the fish was served without batter.

My opinion: 5/10 - I'm not a big fan of kumara in real life.

Celican Lahema Stew:
A spicy seafood stew. This stew is mainly made with mixed white fish, usually whatever's in season, as this dish was originally a grassroots dish for poor fishermen. The fish is marinaded for an hour in Cebuainan sauce, then cooked in a large pot. Clams, mussels, lotus roots, rice noodles and mixed vegetables are then added to the pot with the fish, and spiced with star anise, chili, soy sauce and vinegar. Usually, this dish is served with firm yet thin wheat-flour 'pancakes'.

National Dish: Hifhaanit

Hifhaanit is a traditional Canvish grilled-fish dish, well known for its lemon-taste crispy skin and soft, well marinated with vinegar and salt inside. It can be trace back to the Viking Vinland Era when the warriors started their southward conquest and were lack of sustainable food that can be edible after half a month. That's when the earlier version of Hifhaanit being made. Today it's a very traditional dish and is very easy to make. It's usually seen on Canvish table during festivals and weekends, and is usually served with baked potatoes.

People's Opinion: 8.5/10 (Some people doesn't like the vinegar taste and says that's too sour)
