I think "ingredients' is less important than form, for example. Consider a vegan, non-wheat, sugar-free cake. It lacks eggs, butter, and even wheat and sugar. Yet by all means the result is still clearly the texture on expects from cake.

But the texture of the two is rather different, isn't it? American-style cheesecake doesn't feel like cake when you eat it, at least not by the feeling (it is not as puffy, for example).
