Perhaps the OP's nation is landlocked with no access to the sea, so it can't fish for salmon. That's the case with Alzatia as well (it's landlocked between France and Germany). But it does have lakes and rivers which are home to several species of trouts, mainly the brown trout. And technically, trouts and salmons are in the same family.

But then again, none of this matters for the Princess, who hates fish. There are some people who like it, though.
