Is there, like, an opt-out option for those who don't want to participate (and possibly lose a good chunk of their population), or do we all have no choice but do it or quit the game?

Yes.

I also got to say, that while I know this is suppose to just be a fun little thing, Max Barry and the. Mods could really flush this whole thing out and add more options, different types of zombies, more factors and variations, increase duration of the apocalypse, and more.

I also suspect, since everyone already knows about the zombies and are preparing, there is going to be some kind of twist to increase the difficulty.

The effects are all temporary, so if you don't want to participate then just totally ignore the whole ideal.
