Actually I'm not categorically of the opinion that the Imperium's slaves (being largely drawn from hunter-gatherer populaces) would be much use for agriculture. Perhaps some for things like grist-mills, where windmills and watermills haven't been built, but otherwise they're much better used for brickmaking, or road-gangs, or moving cargos imo. Real zero-neuron tasks, heh.

I haven't gotten to this point yet, but I'm envisioning early servitude punishments in not!Rome to be pulling ploughs for men, and spinning wool for women - perhaps inserting something related to the quality of the work potentially reducing the sentence, or improving conditions.

Ploughs are a great idea though - Viktor would heartily approve, as that was the beginning of the debt-serf system. Spinning, perhaps, though I think most spinning is still effectively done entirely by hand and whorl, and thus fairly skilled. A good use for female slaves, mayhaps, if they have the skill, but not categorically universalized until you get to wheels.
