Just keep in mind you can retroactively complete interactions in your posts, just be sure to clarify that it happened in the prior week/weeks to avoid confusion.

Again, don't worry if you still have a post planned for Week Two, you can still post for it, just make sure you specify it's for week 2 and not week 3.

My raiding party that I sent in week two, when should it arrive? Week 3, right? Or do you count traveling through the starting county as 1 week as well, making the grand total 2 weeks of travel?

And I still think birds or falconneers are a good idea, I'm still worried about communication/diplomacy, since RoTD sent seven troops and a missionary to Utah, but the player(s) in Utah didn't respond yet. (I know it'd take, like, five weeks, but this feels like forever. Probably in the fifth week of the RP, I'd finally hear something)

Actually, unlike Iron Clan or other raiding groups, the Children at least does diplomacy before they bring the Queen Love over a city. They won't just seek to plunder without consequence. Things like the winter event will force them to raid instead of extort but even still they try to hold some civility about it. They aren't savages, they're scum.
