I'm still a little bit irked by the fact we're still apparently Fett clones despite the Empire already having, in canon, a large portion of non-clones, perhaps even a majority.

Yes, but the OP did state that this is not necessarily following the canon, judging by his saying that this is non-canon, and that the age is 10 bby. Therefore, in the event the Kamino uprising occurred, it has only been about 2 years since clone production ceased.
