So a common issue in Elder Scrolls RP's is that people argue over the value of septims all the time. In the same RP you'll have characters trying to pay off a 400 septim debt and another character spending 100 on a meal on a whim. So I did some digging and looking at the prices of things on Skyrim realized they made no sense at all (why can you sell a fucking piece of firewood to a merchant for 2 septims but a lumbermill will pay you 5 gold? How come of head of fucking cabbage costs ten damn septims when you can only get at most 2 for it? Etc.) The same with quest rewards, they level so are useless. So I took a different route with real estate instead. The cheapest home in vanilla skyrim is Breezehome in Windhelm which costs 5,000 septims. In the real world the cost of an average home is about 3 and 2/3 the average salary in any given area. So by using that metric I figured that the average income of someone in Cyrodil is about 1,366 Septims.

Of course most people will either make more or less than that (most of them making less of course) so I think your typical individual in the Elder Scrolls Universe might generously earn 600-800 septims every year and since they need to pay for necessities they obviously keep much less than that.

A rough idea of how much someone would see in a year based on their lifestyle:

Poverty: >200 Beggars, Vagabonds, Poachers, and Bandits
Broke: 200-350 Farm Laborers, Servants, Dock Workers
Poor: 350 - 600 Soldiers, Guards, Sailors, Priests
Typical: 600 - 800 Shop Keepers, Small time Farmers, Bodyguards, Miners
Lower Middle: 800-1,100 Overseers, Prosperous Farmers, Traveling Merchants
Middle: 1,100 - 1,600 Blacksmiths, Store Owners, Legion Officers
Upper Middle: 1,600 - 2,500 Armorers, Jewelers, People with small holdings
Well Off: 2,500 - 5,000 Landowners, Master Craftsmen, Courtiers, Generals, Emissaries, etc.
Wealthy: 5,000 - 8,500 East Empire Company Officials
Rich: 8,500 - 13,000 Low Ranking Nobles
Filthy With Lucre: 13,000+ Jarls, The Emperor, Player Characters

I think the average adventuring character would probably see lower middle or middle class amounts of coin but would probably be broke or poor because of the amount of money they need to spend to stay on the road.

Just some food for thought.

I'd be interested, depending on how far into the apocalypse it is. I'm always up to play villains and post-apocalyptic bandits seem to be my forte in those kinds of RPs.

It's the Second Pub, obviously. We burnt down the last one for insurance money.

The Third is obviously going to be Revenge of the Wolof or something.

Considering how much murder and destruction a player causes in these games, it's a wonder that Tamriel hasn't fallen into economic depression and/or bolshevism.

Actually, that would be an interesting idea for a story. A semi-serious take on a post-player character RPG world.
