Unless if your retaking Western Europe is a hyperbole or not, it's still part of the history. With the Byzantines are still here, we all know that they could retake Western Europe anytime to refound the Roman Empire.

While retaking the old borders is a long time goal, I care more about just having Italy once again as it's both the homeland and it's part of both de jure Roman and Byzantium.

I do not think so. Though the upper right portion of Louisiana was claimed by Georgia. The rest should be fine. Though perhaps cut out Cuba, for I believe Iberia colonized it at one point if I'm not mistaken.
