scenario 1: the years of rice and salt
The plague kills of 2/3 of all European, not just 1/3, leaving the kingdoms severely weakened and ripe for a Muslim invasion. After the Muslim horde invades from Al-Al-Andalus an control all of Europe, independent kingdoms with a fusion of European and Islamic cultures break off from the caliphate and develop their own identities. In this era, Persa and the Ottomans are by far the richest and most powerful empires west of the Indus valley.
On the other side China blobbed up and ate/made tributaries of all surrounding nations. It expanded to central and began exerting influence over the Indian principalities. This is where their interest clashed with the Muslims and war was declared between China and her supporters and a bloc of Muslims states. The war will mostly take place in central asia, India-Persia and between Chinese and Muslim colonies in america. will expand if interested.

scenario 2: rome meets china/mongols
simple enough in that Rome never really collapsed but instead triumphed over Sassanid Persia. In this timeline Islam never really developed and Muhammad was considered a notable bandit-king in Arabia. The mongols/Chinese eventually swing down from from the steppe and begins the invasion of roman Persian-territories.
I have more ideas if the previous do no seem interesting but will have to write about them later due to time, what do you think?
I'm interested in Scenario 1, although can we have different countries than the ones outlined in the map?
