I feel we are over investigating this, Mr. K is a grown man, what would he do in a girl's body? Not like he can do dude stuff (before you even think it Galnius, he'd probably not do the hanky panky with his hand either as going from man gibblies to girl bits would require a real knowledge of both) so he'd probably just possess the girl for moment where she, say is too embarrassed to ask a guy out, or too nervous to give a speech before the class, just those moments where she needs a boost. Mr. K seems like the type of guy to do that.

And like I said, when someone needs some ass kicking

Like maybe someone tries to physically bully her or something, then she allows Mr. K to take over to beat them up. There's also the function that Mr. K can taste food again since his death, something like that.
