I'd hope that the Slime Queen Xyrix would perhaps provide more of a challenge. That is assuming we go ahead with the rest of the arc... Which I'm not sure about anymore...

Once Everett unlocks the Power Eternal's Cosmic Form, he could provide an interesting challenge. It basically affords him a high percentage of Eternity's power, making comparable to a relatively satiated Galactus. This will be, however, at the cost of him needing to perform Galactus-esque feedings to restore his energy.
