I've already played both Oblivion and Skyrim extensively. Should I play Daggerfall or Morrowind next?

Morrowind. Many consider it the best of the whole series, though beware that pre-Oblivion ES uses a different combat system (I believe they use RNG to decide whether its a hit and how much damage, similar to a tabletop game)

Agreed. Morrowind is fantastic. In my opinion it's what made the Elder Scrolls series as a whole the caliber that it is.

Considering making a second character...not sure if I want to make some monster/witch hunter character, a fanatical and exiled Dunmer, or some sort of pirate...the dunmer character depends on how long it has been since the events of morrowind and how feasible it would be for a young dunmer to still be alive from that time.

Anyone have a preference because I can't decide.

It's been over 300 years since Dagoth Ur and the Nerevarine and all that good stuff, so unless you're an ancient Telvanni wizard a Dunmer from that time doesn't seem possible, considering 200 years is "old" for a Dunmer.
