Let's see. On general principles, I'll advise Berserk, because everyone should read it, and Lucifer and the Biscuit Hammer (AKA Wakusei no Samidare), because it's awesome. The former is medieval dark low fantasy (as in dark), with excellent worldbuilding; the latter is action, in a contemporary setting, but focused heavily on character development -- not that the action itself is lacking, mind you. And I'm assuming you've read Fullmetal Alchemist, because if you haven't, it's a given that you should.
That aside, you could try the very good Full Metal Panic! adaptation, which is divided into Full Metal Panic! and Full Metal Panic! Sigma. It's a contemporary / low sci-fi action mecha. Also try Noragami, which is urban fantasy. Both have an anime adaptation, which in both cases is incomplete and fails to cover the most interesting parts IMO (although I've heard the Noragami anime is getting continued). Oh, and read Tokyo Ghoul. The manga, not the anime. That aside ... I actually don't read a lot of mecha, but I'll make a few suggestions.
- Deadman Wonderland: action, urban fantasy (well, insofar as a prison counts as "urban"). It starts off a bit weak, but gets very good soon enough, and has solid character development.
- Gunslinger Girl: action, very seinen. It's .. fairly sad, too.
- Dance in the Vampire Bund: better than I expected. It's a vampire & werewolf story, but it's good. Urban fantasy, action.
- I'm going out on a leg and suggesting Ouroboros and Kimi no Knife: they're more detective manga than action per se, but they are well written (well, as far as Ouroboros has gotten).
- Sekaioni: I'm not sure what you consider shounen fighting, but anyway, try it out. It's kind of dark urban fantasy.
- Gate - Jietai Kare no Chi nite, Kaku Tatakeri: ... A dimensional portal opens between Tokyo and a parallel high fantasy world which tries to invade and fails catastrophically. I'm not sure it fits your tastes, but it's fairly original and interesting.
- Shingetsutan Tsukihime: the manga adaptation of the Tsukihime VN. Far better than
the animean anime adaptation would be if it existed, which it doesn't. You know what the Nasuverse is like.- Vinland Saga: not contemporary, but the action is top-notch. It's a realistic historical manga about Vikings. Very good IMO.
- Arachnid: a bit of an ... acquired taste? It's midway between shonen and seinen. Not actually very good if I look at it with a critic's eyes, but it's very entertaining.
- Tokyo ESP: urban fantasy. It's more shonen than seinen, but it's entertaining, and the fight scenes are among the best I know, being even technically correct from a martial arts point of view.
- Apocalypse no Toride: A zombie invasion thing, but it manages to be original in the field.
