Yeah, and the freaking CFA-44 is a super-plane. Especially it's remote-operated variant.

No, the AFRX is a super plane. Yknow that camo Wizard gets in ACZ? It has that. Except, it goes on, and stays on. Until you turn it off, or pull above 12gs which temporarily pulls a few wires out of place. It has is more invisible than a parrot to radar. No heat signature, at all. Canards, on the front, and extra ones at the back just below the delta wing. Covered hatches that open to release a non flammable burst that increases manuverability to insane levels. In theory, it can pull a 180 flat turn. It would almost certainly kill any (almost) pilot who did it, but it could. Might also rip the vert. stabilizers off. It has a deflection system that sends radar guided missiles, radio guided, heat guided, haywire af. And unlike ADFX, no weakness to it in the air intake. You have to effectively swarm it with missiles.
$30 says most of you can guess who will be using this aircraft.

Now, I see some aircraft have variants listed, but others do not. Does this mean that I need to use the baseline version, are there versions im not allowed to use, or its open to the OP to determine if its allowed or not?

This simple question still hasn't been answered.

Hehe, no.
Here's a hint. This plane could be rightfully called the Mobius 1 of fighters.
I made this list forever ago, and took from the resource i had w/o wiki them. So, yes, ALOT of variants are missing, and it still took me the better part of 3 hours. Just put the variant down, and i'll check it out, modify the list, etc.
Again, requests welcome to add aircraft.

So basically it's an even more obnoxious lovechild of the Fenrir, the GAF-1 Super Goose, and the ADFX-02?
Lovely.

This leads me to the SU-25, 24, or MiG-25.
Of these, I was thinking the Su-24M2, specifically the Gefest version currently in use by the VVS, the MiG-25BM, a version tasked for SEAD and strike/reconnaissance, or the Su-25TM/SM versions.
I have a preference for Bloc aircraft you see.

I only barely know the last one.
But yes, MUCH more. Its only possible in the AC universe because of things like the ADFX-01. The actual plane is an MT prototype under development
And a fucntioning prototype isn't expected for about 20 years.

The ADFX-02 is the version Pixy flies, I believe.
