The Empire is aware of Death Watch, even the Emperor knows about the Death Watch and has encountered them directly.

And the Empire not using Mandalorians is a bit of a stretch, they have used mercenaries (Boba Fett, who was also a Mandalorian and held the title of Mandalore) and they did use Mandalorians. However, they would not use Death Watch due to how organized they are and how ruthless they are. And given the Emperor's history with the Death Watch, he would likely want them stamped out either immediately or at least quickly.

Well, you can only take a Star Wars race. This is a Star Wars RP, therefor we use Star Wars races. Not Star Trek races, not Lord of the Rings races, and not Ratchet and Clank races. It doesn't matter if you have an issue with every single race in the SW universe, we're in an SW roleplay and will use SW races. Done. End of story. Close the file. Besides, those few races are like a minuscule fraction of all the races of Star Wars. I'm sure you can find one that is interesting.

As to your human superiority thing, yes. The Empire was largely pro-human and had issues with xenophobia in throughout its existence.
