My heavy cavalry are based on the Byzantine Cataphracts while my light cavalry are based on the Polish Flying Hussars but they also use Semi-Automatic Pistols and carbines as well.

They use these as weapons
Composite bow: Same as that carried by the Toxotai.
Kontarion: or lance, slightly shorter and less thick than that used by the skutatoi which could also be thrown like a javelin.
Spathion: Also identical to the infantry weapon.
Dagger
Battle axe: Usually strapped to the saddle as a backup weapon and tool.
Bambakion: Same as that of the infantry but with a leather corselet usually depicted as colour red.
In addition,they use semi automatic carbines and pistols as well.

I believe the Prussian were more infantry based, but I could be wrong
and why would there be Prussian aristocracy in that manner, if the ship left earth some time around now or later then I doubt Prussian aristocracy would be anything like it was back when they served Prussia/Imperial Germany

I want to warn you I am no expert

Organization would probably be divided into two groups. Your cavalry (both heavy and light) would probably use the platoon as a basic unit. That said Heavy cavalry would probably stay in company sized units because they are focused on frontline combat so they would favor staying in large units to fight the enemy. The Light cavalry will probably be more focused on platoon and small group organization because they will focus on flank attacks. Platoons will probably be the smallest that a Heavy Cavalry Unit (HCU) will operate in and probably the base of an independent attachment of Light Cavalry Units (LCU). You will probably assign them as regiments on an operational level, but on tactical they will probably operate as smaller units because cavalry does not straight up fight the enemy. On average, HCUs will cost more, be harder to train, and in general be smaller in number to LCUs which is what will make them a more elite force while LCUs will probably be more experienced. So basic organization will be Regiments that are divided into companies that are divided into Platoons that will handle most of the work, while Light Cavalry might be divided into something like squads.

Equipment would probably be better handled by you, but from what I can gleam: HCUs will be more useful against the less developed nations as being to heavily armored can hurt them if they fight opponents that have guns or mountainous terrain. Their heavy armor will make their horses more easily tired which means that they will largely be confined to established supply lines. They should be trained in several types of weapons so that they can be as fluid as the situation demands. LCUs will be the backbone of your army as they are more versatile and expendable. They should be trained in only a few times of weapons as they will need to be light on their feet to stay useful. They should be able to travel farther than the heavies and on more difficult terrain. Training them to act like dragoons will probably be very useful as well.

Tactics, I explained some of it earlier, but here is the rest. HCU will be on the frontlines, they will charge into the main troop formation and then charge out once they have broken the unit significantly. The LCUs will focus on harassing the enemy from the sides and leaving before the enemy can properly respond; that is why they will focus on smaller unit actions, one unit will attack on the side and another can attack on the opposite causing confusion amongst the enemy. The LCUs will probably take part in riskier actions because they are more expendable, but this will mean that you will have a solid corp of veterans among the new recruits. Risky does not mean suicidal, the missions can be dangerous, but should have a good chance of the soldiers returning alive. Also the LCUs are better suited for long range patrols and reconnaissance because their horses can travel for longer periods of times without being weighed down. In general be mindful of areas with uneven terrain and steep differences in height, cavalry does not usually do well in these.
