Here's a map. I wouldn't call it perfect, but it should give a general overview.
Bulgaria is currently reserved- the OP is waiting on someone's app. Russia is a mystery- you'll have to ask Soviet Ruk-Tsan, the current Rus player- not sure if they're currently holding just historical Rus territory or all of Russia. Iberia was apparently reserved by someone way back, but it might be open again, soon.
Lots of Northern America is open. Parhe's Empire of Hohokam and Eastern Koryo occupies most of Canada, but they've been very vague about exact claims.
I'd suggest the Caribbean, Mauritania, Central Asia or Siam. (Pst, Vehemia. I'm busy with other things currently, but I'll have this done by tonight)
