Ah, my apologies, forgot Dol Guldur was originally elven. Barad-dur is mostly stone as far as I know, but much of the outer 'skin' is layers of black iron. Angband, if memory serves, and Utumno were both delved deeply into stone of mountains, the former actually having been a part of the Ere Engrin, yes?

That may be because those were the Witch King's and Morgoth's fortresses, not saurons.

Oh, bugger, forgot we're talking about Mordor specifically. I can't say anything about Minas Morgul as that was originally Minas Ithilien, but I would still argue they mostly use dark stone ribbed and girded with iron supports and bulwarks and whatnot. Making fortresses entirely of iron would be impossible, and completely wasteful in terms of time and resources - even orce aren't quite that stupid!

I agree. Maybe they have an outer layer of iron for defense?

Iron-skinned mountain, I believe - also, do realize that's Frodo's perception - he's no military engineer, and he's already afraid of Sauron, so I wouldn't trust his perceptions to much. Also, do not Tolkien often writes metaphorically, so it's likely more so symbolic that literal.
I doubt even Sauron could build a tower of iron that was nearly a kilometer and a half tall - it would need to be mostly stone as I doubt even that much iron could be mined from Mordor to build something that would literally mass over three hundred million tonnes of pure iron if it were made of iron alone.
