Look at Al-Andalus in real life. Catholics and Jews had few problems living under the Muslim nation----most of the Caliphates and other similar nations were extraordinarily tolerant to all faiths and creeds, and as such, commanded immense loyalty from their subjects. I'm fairly certain North Africa simply doesn't have the carrying capacity of the Ukraine, regardless of time. Ukraine is, literally, the breadbasket of Eastern Europe.

I think a diagonally line between Africa and Arabia would help to separate the Ayyubids and Ethiopians, but great nonetheless.
