Huldr hides are made of living stone, and as such are very difficult to kill. A huldr rarely wields any weapons, but on occasion they will throw tree limbs and large rocks at more distant foes. Huldr may be slow, but their strength is immense and they can easily kill a man with a single blow.

I can't say I'm particularly fond of the first or the last, to be honest.

The first is an actual Celtic death demon, plus a pinch of SCP-173. And the last is just a troll by another name. "Huldrefolk" is a somewhat catch-all name for troll-like creatures in Norse folktales. I gave it rocky skin because I wanted to add in the "turns into stone" element of trolls without making it too overpowered. Did you dislike them for balance reasons, or aesthetic ones?
