From what I have read the general agreement is that both are good, and together they allowed much better control and stability on horse back than previous. IIRC Byzantine cavalry started using some massed heavy cavalry tactics with just the high cantled saddle, but that the arrival of stirrup increased their combat ability.

As an equestrian myself, no, you don't need stirrups to do most of the things. However, they do help a great deal in letting you concentrate less on your body position and more on everything else you're doing.

How well trained were French lancers compared to the Companions?


Given that Norman cavalry conquered most of Italy, conquered Sicily and rekt the Byzantine Empire a number of times, they were pretty well trained.

The development and spread of the tournament in the twelfth and thirteenth centuries only increased their training, discipline and ability to stay in formation while charging, at least when competently lead and when the army wasn't composed of factions who were all but at war with each other.
