Would it be reasonable to equip my army with M-4 Shermans in MT, for reserve and training? What about other leftover WW II materiel, like pershings etc. ?

If you're training your soldiers to use Leopards you should use, well, Leopards. They won't have to readjust to the new vehicle. Also, I'm pretty sure the German tanks works in a different manner then American ones

Argentina is advanced enough to make their own tanks.

Chile uses Shermans and Chaffees, or did until a few years ago.

Any real problems with the Saxon APC I should know about in a 1980s timeframe? Considering drawing up a version to fill the role of wheeled APC.

It's... wheeled... Seriously, tracks are better overall, since wheels have vastly higher ground pressures than tracks, and thus are more prone to getting stuck.

Wheeled transports are good in some circumstances. The Saxon was made to drive light infantry from GB to Germany via the French road network. It would be faster and less logistically demanding than FV432.

Because most of Padnak lacks developed roads, armoured vehicles move under their own power, however over long distances they are usually carried by trailers pulled behind MAZ-537s or other similar heavy 8x8 vehicles
