I seriously have no idea how ponies hold things or use guns.

They hold things with their hooves and mouths or magic if they're unicorns.

And guns...in my canon they use saddle-mounted guns that are activated by biting on the firing pin.

After all, no matter how 'perfect' you think the human race is, it is still a species and is therefore constantly evolving. One day you may find that humanity has evolved into an entirely new, superior species. And when it does, you had better have let your citizens evolve along with it. When evolution passes you by, there's no catching up.

The Harry Potter novels are definitely set in the real world with modern technology and even some verifiable locations (such as King's Cross Station), but they have magic and wizards. Does that make them any less realistic?

Well, it does. But we're discussing tech levels here. A nation based on Harry Potter books that would use contemporary technology would be considered MT.

OOC: MT excludes unrealistic things kind of by definition, since it's an exclusive definition: only those capabilities we possess in the real world are accepted as canon. You can't have a MT society with magic (that's fantasy tech), you can't have a MT society with advanced technology (that's PMT or FT) and you can't have a MT society with things that make no goddamn sense (there's... well, really no tech level that's appropriate for that). Sentient ponies count as magic, unless you have a scientific explanation for why they're sentient, in which case they count as advanced tech.
